LOCAL FISH

Goujonettes of John Dory with Fresh Herbs

 

Ingredients:  Serves 6

  • 1 ½ Kg John Dory Fillets
  • Small bunch of sweet herbs – Basil, Thyme, Sage, Chives, Parsley
  • 2 Small Lemons
  • Butter

Method:

    • Pre-Heat oven to 250ºC.
    • Coursely chop the herbs.
    • Remove skin and any bones from fillets. Divide each fillet into its three lobes and with a sharp knife slice each lobe lengthwise into strips about ½ cm wide,
    • Melot some butter in a large pan and when it starts to brown add the John Dory and turn with a spatula.
    • Sprinkle the herbs over the fish, season with salt and pepper and cook in  hot oven for 4 minutes.
    • alternativly finish cooking in fry pan over a low heat, turning frequently.
    • Drain the fish on kitchen paper, squeeze lemons over the fish and serve.
