OYSTERS
Kilpatrick
Ingredients:
- 1 Dozen fresh or defrosted, opened oysters
- 2 Rashers of Bacon – finely diced
- 3 Shallots – finely chopped
- 50g Fetta cheese
- ½ Tomato – peeled, seeded and chopped
- 1 Tablespoon parsley – chopped
Method:

Mix Bacon, Shallots, Parsley and Tomato together in a bowl.

Lay Oysters flat on a baking tray and apply a generous amount of the mixture on top of each oyster.

Sprinkle with Worcestershire sauce.

Crumble feta cheese over each oyster.

Place tray under hot grill for approx. 3 minutes until bacon is browned.

Serve on a platter immediately.
