OYSTERS

 

Kilpatrick

 

Ingredients:

  • 1 Dozen fresh or defrosted, opened oysters
  • 2 Rashers of Bacon – finely diced
  • 3 Shallots – finely chopped
  • 50g Fetta cheese
  • ½ Tomato – peeled, seeded and chopped
  • 1 Tablespoon parsley – chopped

Method:

    • Mix Bacon, Shallots, Parsley and Tomato together in a bowl.
    • Lay Oysters flat on a baking tray and apply a generous amount of the mixture on top of each oyster.
    • Sprinkle with Worcestershire sauce.
    • Crumble feta cheese over each oyster.
    • Place tray under hot grill for approx. 3 minutes until bacon is browned.
    • Serve on a platter immediately.
